Ingredients
(Makes 2 tacos):
- 1/2 block extra-firm tofu, crumbled
- 1/2 tsp turmeric (for color and anti-inflammatory power)
- 1/4 tsp smoked paprika
- 1/4 tsp cumin
- Pinch of chili powder (or cayenne if you’re bold)
- 1 tbsp olive oil or avocado oil
- 1/2 small onion, diced
- 1 jalapeño, finely chopped (leave seeds for kick!)
- 1/2 red bell pepper, diced
- Handful of fresh spinach or kale, chopped
- 1/2 cup black beans, rinsed
- Juice of 1/2 lime
- Salt & pepper to taste
- 2 corn tortillas, warmed
- Optional: chopped cilantro, hot salsa, sliced avocado, pickled red onions

Quick Instructions
- Sauté onions, jalapeños, and red bell pepper in oil over medium heat until soft (about 3-4 mins).
- Add crumbled tofu, turmeric, paprika, cumin, chili powder, salt, and pepper. Cook for 4-5 mins until slightly browned.
- Toss in black beans and greens. Cook until spinach is wilted and beans are heated through.
- Finish with a squeeze of lime juice.
- Warm up your corn tortillas on a skillet or open flame for that authentic edge.
- Assemble tacos: Spoon in the tofu scramble mix, top with avocado, salsa, and a dash of cilantro.
