Pasta alla Norma is a classic Sicilian dish featuring tender eggplant, sweet tomato sauce, fresh basil, and salted ricotta (ricotta salata). This recipe roasts the eggplant instead of deep-frying it to maximize nutrition and natural caramelization while keeping the sauce rich and aromatic.

Ingredients (4 servings)

  • Eggplant: 2 medium eggplants (about 1.5 lbs), cut into 3/4-inch cubes or half-moons
  • Pasta: 12 oz (340g) rigatoni, penne, or whole-wheat pasta
  • Tomatoes: 1 can (28 oz / 800g) whole peeled San Marzano tomatoes, crushed by hand
  • Aromatics: 4 cloves garlic (thinly sliced), 1/4 tsp red pepper flakes (optional)
  • Oil: 3 tbsp extra virgin olive oil (divided)
  • Herbs & Seasoning: 1 large bunch fresh basil, kosher salt, and freshly ground black pepper

1.Roast the Eggplant:Preheat oven to 425°F (220°C).

Toss the eggplant cubes with 2 tablespoons olive oil, 1/2 teaspoon kosher salt, and black pepper. Spread in a single layer on a parchment-lined baking sheet and roast for 25–30 minutes, flipping halfway, until golden-brown and tender.

2.Simmer the Tomato Sauce:

While the eggplant roasts, heat 1 tablespoon olive oil in a large skillet over medium heat. Add the sliced garlic and red pepper flakes; cook for 1 minute until fragrant (do not brown). Pour in the crushed tomatoes and 1/2 teaspoon salt. Simmer gently over medium-low heat for 15–20 minutes until slightly thickened.

3.Boil the Pasta:Reserve cooking water before draining.

Bring a large pot of heavily salted water to a rolling boil. Cook the pasta until 1 minute shy of al dente. Scoop out 1/2 cup of starchy pasta water, then drain the pasta.

4.Toss and Emulsify:

Add the drained pasta, roasted eggplant, and half of the torn fresh basil directly into the skillet with the tomato sauce. Toss over medium heat for 1–2 minutes, adding a splash of reserved pasta water as needed to create a glossy sauce that clings to the pasta.

5.Garnish and Serve:

Remove from heat. Plate into warm bowls and top generously with freshly grated ricotta salata, the remaining fresh basil leaves, and a light drizzle of extra virgin olive oil.
