  1. Mmm, this sound good! You’re right, chicken breast is so versatile and tasty. It’s great for stir-fries, soups, and throwing on the grill too. I remember when I first started cooking, I had a little trouble with chicken breast because it would dry out easily. But with a little bit of practice I learn how to handle it. I just have to remember that it needs to be cut small and cooked fast, or it goes into a pot!

    • Thanks for your comment. Here’s one of my favorite ways to prepare chicken. Since I live in south Texas, fajitas are one the essential food groups (LOL).I’m going to use my slow cooker. I’ll sautee onions (cut long) green and red pepper strips, a couple of garlic cloves. When they’re read I’ll add a frozen chicken breast in my slow cooker along with lots of sweet onions (cut long style, a mix of green and red peppers, a half can of crushed tomatoes (I’ll add a bit more later), rosemary from my garden, cilantro and a jalapeno for added spice. I let it cook all day. By noon, I want to eat it, it smells so good. An hour before dinner I’ll take two forks and break the chicken up. I can hear my tortillas calling me. Have a great day. Ray
