A Reflection on Success and Hope

It doesn’t matter where you live, we often find ourselves rooting for our favorite teams. We give them our emotional loyalty. When they win, we win with them. When they lose, especially a big game, we are devastated. For many, our favorite teams are a part of our persona. They take hold of our hidden dreams to be successful, noticed, and better than the rest. Although we may never achieve that kind of status or notoriety, when our teams win championships it’s as if we did it. I wonder if professional athletes understand how much we depend on them to elevate our spirits and lift us out of the often ordinary struggles with living. In some ways the same applies to us. When we are successful and live life confident that we can overcome any challenge that comes our way, we give hope to those who are frightened and fearful of stepping out and embracing life.

Love Changes Us

A Single Smile ~ A Poem by Paul Eluard

A Single Smile

Paul Eluard

A single smile disputes
Each star with the gathering night
A single smile for us both

And the blue of your joyful eyes
Against the mass of night
Finding its flame in my eyes

I have seen by needing to know
The deep night create the day
With no change in our appearance.

  3. Low in Fat: Veal is a lean meat, especially cuts like veal loin or sirloin, making it a great choice for those monitoring their fat intake while still enjoying flavorful meat.

Recipe: Spicy Veal Stir-Fry with Vegetables

Ingredients:

  • For the stir-fry:
    • 1 lb veal cutlets, thinly sliced
    • 2 tbsp olive oil
    • 1 red bell pepper, sliced into strips
    • 1 yellow bell pepper, sliced into strips
    • 1 cup broccoli florets
    • 1 small onion, thinly sliced
    • 2 cloves garlic, minced
    • 1-inch piece of ginger, minced
    • 2 tbsp soy sauce (low sodium)
    • 1 tbsp rice vinegar
    • 1 tsp honey
    • 1 tsp chili paste or sriracha (adjust to taste)
    • 1 tsp sesame oil
  • For garnish:
    • Chopped green onions
    • Sesame seeds

Instructions:

  1. Prepare the Sauce: In a small bowl, whisk together soy sauce, rice vinegar, honey, and chili paste. Set aside.
  2. Cook the Veal: Heat 1 tbsp olive oil in a large skillet or wok over medium-high heat. Add the veal slices and cook for 2–3 minutes per side until lightly browned. Remove from the skillet and set aside.
  3. Cook the Vegetables: Add the remaining olive oil to the skillet. Sauté the garlic and ginger for 30 seconds until fragrant. Add the onions, bell peppers, and broccoli. Stir-fry for 4–5 minutes until the vegetables are tender-crisp.
  4. Combine and Season: Return the veal to the skillet. Pour the sauce over the veal and vegetables, stirring to coat everything evenly. Cook for 1–2 minutes, allowing the sauce to thicken slightly. Drizzle with sesame oil for a finishing touch.
  5. Serve: Transfer the stir-fry to a plate or bowl. Garnish with chopped green onions and sesame seeds. Serve over steamed brown rice, quinoa, or cauliflower rice for a low-carb option.

Healthy Tips: Take Control of What You Eat

Today’s Health Tip:

Cook more meals at home: This gives you more control over the ingredients you’re using.

It’s fun to go out for dinner. Nice ambiance, attentive wait staff, food cooked to perfection. Here’s what you got to understand. The cooks in the kitchen, nice people, they don’t care if you have high blood pressure, type two diabetes, ulcers, or if certain foods cause you stay awake at night. They’re concerned with taste and plating. You go out for pizza, do you think the pizza maker is worried your LDL and triglycerides are spiking as he piles on the cheese? I’m not going to talk you into staying home and doing all your cooking. I’m hoping you’ll tell the waiter how you want your food prepared. Take control of the food your paying for. It’s your money and your health.

Guys, Are You a Gentleman?

There is an interesting YouTube channel called GentZ. The folks who publish the channel claim their goal is to create a generation of gentlemen out of Gen Z. What they claim to be a gentleman’s actions has always been common sense to me. I open a door for a woman, wait until everyone is served before eating, dress appropriately for the occasion, and make sure my fingernails are clean and trimmed. It makes commonsense for a guy to act the way they recommend Gen Z to act. Guys, if you want to up your game and get that promotion and you’re not sure of what to do in social situations you might want to check GentZ out.
