Ingredients:

  • 1 lb Brussels sprouts, trimmed and halved
  • 1 tbsp olive oil
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp chili powder
  • ¼ tsp cayenne pepper (or to taste)
  • Salt & pepper to taste
  • 1 small jalapeño, finely diced
  • ¼ cup cotija cheese (or dairy-free alternative)
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime

Chipotle-Lime Crema:

  • ½ cup Greek yogurt (or dairy-free alternative)
  • 1 tbsp lime juice
  • ½ tsp chipotle powder (or 1 tsp adobo sauce from chipotle peppers)
  • ½ tsp garlic powder
  • Salt to taste

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss Brussels sprouts with olive oil, smoked paprika, cumin, chili powder, cayenne, salt, and pepper. Spread them evenly on the baking sheet.
  3. Roast for 20-25 minutes, flipping halfway through, until crispy and golden brown.
