A Friend ~ A Poem by Edgar Albert Guest

A Friend

Edgar Albert Guest

A friend is one who stands to share
Your every touch of grief and care.
He comes by chance, but stays by choice;
Your praises he is quick to voice.

No grievous fault or passing whim
Can make an enemy of him.
And though your need be great or small,
His strength is yours throughout it all.

No matter where your path may turn
Your welfare is his chief concern.
No matter what your dream may be
He prays your triumph soon to see.

There is no wish your tongue can tell
But what it is your friend’s as well.
The life of him who has a friend
Is double-guarded to the end.

Healthy Foods and Recipes: Potatoes

Potatoes often get a bad rap, but they can be a healthy addition to your diet when prepared in a healthy way. Here are 4 reasons why:

  1. Nutrient Powerhouse: Potatoes are packed with essential nutrients, including vitamin C, potassium, vitamin B6, and fiber. Vitamin C is an antioxidant that supports immune function, potassium helps regulate blood pressure, vitamin B6 is important for brain development, and fiber aids digestion and promotes feelings of fullness.
  2. Energy Source: Potatoes are a good source of complex carbohydrates, which provide your body with sustained energy. Unlike simple carbohydrates that cause a rapid spike in blood sugar, complex carbohydrates are digested more slowly, providing a steady release of energy.
  3. Promote Fullness: The fiber content in potatoes can help you feel full and satisfied after a meal, which can be beneficial for weight management.
  4. Versatile and Affordable: Potatoes are incredibly versatile and can be prepared in countless ways. They are also an affordable staple food, making them accessible to most people.

Very Healthy Recipe Featuring Potatoes:

Roasted Potato and Vegetable Medley

This recipe is a great way to enjoy potatoes as part of a balanced meal. Roasting brings out the natural sweetness of the potatoes and vegetables, and the herbs add flavor without adding extra salt or fat.

Ingredients:

  • 1 pound small red potatoes, scrubbed and quartered
  • 1 red onion, cut into wedges
  • 2 carrots, peeled and chopped
  • 2 bell peppers (various colors), chopped
  • 1 zucchini, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, toss the potatoes, onion, carrots, bell peppers, and zucchini with olive oil, rosemary, thyme, salt, and pepper.
  3. Spread the vegetables in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until the vegetables are tender and slightly browned, turning halfway through.

This recipe is a great side dish for grilled chicken, fish, or tofu. It can also be served as a vegetarian main course.

Tips for Healthy Potato Consumption:

  • Choose the right cooking method: Baking, roasting, grilling, and steaming are healthier options than frying.
  • Limit added fat and salt: Go easy on the butter, cheese, sour cream, and salt.
  • Eat the skin: The potato skin is a good source of fiber and nutrients.
  • Pair with other healthy foods: Enjoy potatoes as part of a balanced meal that includes lean protein, vegetables, and whole grains.

By following these tips, you can enjoy the health benefits of potatoes as part of a balanced diet.

Today’s Healthy Tip: Are You Getting Enough Sleep?

DYN

Get enough sleep: Most adults need around 7-8 hours of sleep per night.

I generally get at least 7 hours of sleep each night. I go to bed around 9 a.m. and set an alarm for 4:45 a.m. It’s natural to have those nights where your brain takes off and no matter what you do, it doesn’t shut down. I don’t worry about it. I tell my brain to enjoy itself while I picture myself hiking in the Rockies, taking a road trip to Corpus and Padre Island, or watching the Red Sox play a nine inning game. In my mind they win (hey we’re not talking reality here). Usually I’m asleep by the 5th inning. Our minds are great that way. We can make anything up. Usually, my mind decides what I’m making up is more entertaining than what it was worried about and I’m off to sleep. It works for me. Try it.

Who Says I Have Follow Sound Advice?

I had a laugh out loud moment when I read this quote by Lewis Carroll from Alice’s Adventures in Wonderland / Through the Looking Glass. “She generally gave herself very good advice, (though she very seldom followed it).” I thought it sounded as if Lewis Carroll were talking to me. I am capable of giving great advice (especially for others). I am less than willing to apply it to myself. I’m not sure one has to be logical all the time in his/her decision making. Sometimes it feels right and we decide contrary to the prevailing opinions and advice. There are other times when we have to see for ourselves what will happen if . . .” Fill in whatever you want after the “If.” For me, it’s usually a challenge to the established way of doing things. It certainly has been the source of many adventures.

For My Children:

For My Children

Eberhard Arnold

See how the bee-people swarm together –
what perfect oneness they display!
They build and serve and work as one.
With “mine” and “thine” they do away.

When they return to nurse their young,
then, too, they are completely one.
They share the harvest of each blossom,
and none lives for himself alone.

Bees know the impulse of true oneness –
a wondrous sign of community.
A people of love, they toil as one,
and none is left out of their unity.

Healthy Foods & Recipes: Mushrooms

4 Reasons to Include Mushrooms in Your Diet

NOTE: My dad picked wild mushrooms and my mom included them in her pasta sauce. She also sautéed mushrooms with onions and garlic (yummo). I am biased for mushrooms. I include mushrooms in my stirfry dishes and pasta (thanks, Mom).

  1. Rich in Nutrients: Mushrooms are low in calories but high in essential nutrients like B vitamins (e.g., riboflavin, niacin), selenium, and copper, which support energy production and immune function.
  2. Immune Support: Certain mushrooms, such as shiitake and maitake, contain beta-glucans, which enhance immune system activity and may help the body fight infections.
  3. Antioxidant Properties: Mushrooms are a good source of ergothioneine and glutathione, powerful antioxidants that help reduce inflammation and oxidative stress, which are linked to chronic diseases.
  4. Heart Health: Mushrooms are cholesterol-free and contain compounds like potassium and fiber that promote healthy blood pressure and cholesterol levels.

  2. Sauté the Mushrooms: Heat olive oil in a large skillet over medium heat. Add the garlic and cook for about 1 minute until fragrant. Add the mushrooms and stir-fry for 5–7 minutes until they release their water and turn golden.
  3. Add Spinach: Toss in the spinach and cook for 2–3 minutes until it wilts.
  4. Season: Drizzle with soy sauce or tamari, sprinkle black pepper, and mix well. Optionally, add red chili flakes for a touch of heat.
  5. Serve: Enjoy as a side dish, over quinoa, or as a topping for whole-grain toast.

This dish is quick, nutrient-dense, and packed with flavor, making it a great way to enjoy the benefits of mushrooms.

Great Healthy Tips: Make Healthy Snacks Visible

Keep Healthy Snacks at Eye Level — Organize your kitchen so healthy choices (fruit, nuts) are visible and processed snacks are hidden.

If you visited my kitchen area you’d find a section with sunflower seeds, pumpkin seed, and a mix of raw almonds and raw walnuts. I’ll nibble on them throughout the day. I also keep a small bowl of halo oranges on the counter. When I’m hungry I’ll grab a small orange. They’re easy to peel and taste great. I keep a box of biscotti in the cabinet. I limit myself to a biscotti with my coffee to weekends.

Family is Important

Family has always been important to me. It has given me a sense of place, love, joy, and security. My understanding of family has evolved. In one sense I have 5 daughters and their families. I live geographically apart from them, yet, we remain close. In another sense, I am surrounded by family. I consider my neighbors and friends as part of my family. Family exists wherever I go. Each time I make a new friend, I am building and extending my family. Being part of a family is important as we navigate our journey. We can all be family builders. It takes effort to reach out. It takes a certain sense of vulnerability and courage. The benefits are well worth the effort.
